  8. Continue cooking until pork will shred with a fork. About 3 more hours on low (2 hours on high)
  9. Remove roast and cube or shred.
  10. For the restaurant style crispy edges, finish pork on a flat top grill or arrange on a sheet pan and place under a low broiler until edges are browned.
  11. Serve with tortillas and whatever toppings you like.
