- In a cooking pot on medium heat add the 3tbsp oil and allow it to heat.
- Add onions and garlic and cook for few seconds, add ginger, turmeric, and sugar and continue to stir. Add salt then the tomato capsicum paste, stir, cover and let cook for about a minute.
- Once ingredients are well cooked add in the water first then coconut milk then add in the chicken pieces. Cover and cook for 3-5minutes then stir in to cook chicken on all sides for another 5 minutes.
- Garnish with corriander leaves (optional) and serve with rice or chapatti
